![]() Rating: - The book of many thinksIf u want to become a Chef this book has to be in your library very well organized book with lots of useful tips and recepies. Rating: - Great BookI've owned this book for almost a year and have been very pleased with it. The instructions are easy to follow and I've been able to increase my skills by reading then doing. I really like how, for most techniques, there's a "why" you do something one way vs. another. His Professional Baking book is also superb. Don't be turned off by what you may think is too hard or complicated. Sure, you might fail the first time but so do most people riding a bike. With a little bit of practice you can make great sausage, yummy cookies (blue ribbon at the county fair!), incredible soups and main dishes, and awsome desserts. Take a chance! Rating: - Excellent ReferenceIn my opinion, if there is only recipe and reference book you want to buy this is it. It is the bible of culinary (if Larousse did not come out with his Gastronomique) and indeed helpful for those serious in cooking. Rating: - Item Poorly WrappedThese culinary books are very heavy, but they were only shipped with plastic wrap. Six of the eight corners were dented, which was quite disturbing. I decided to keep the books, simply because I didn't want to wait four weeks for replacements. This seller really needs to spend the extra .12 cents and use a little bubble wrap."
